It’s no secret that the Yarra Valley produces exceptional Chardonnay, after all, Dominique Portet produce two! The Fontaine, showcases the pure fruit style - with a hint of oak, good acidity and poise, it’s as fresh and crisp as mornings in the Yarra.
Ben's aim was to have this wine to over-deliver but not over complicate, so the lion’s share was fermented in stainless steel for a clean, fresh expression. Some oak was used for maturation, including a 15% new French oak, to add texture and aromatic complexity. The wine was kept on its fermentation lees for six months for a touch more weight and better mouthfeel.
